Coconut Cilantro Lime Rice

Just like Chipotle, but better! Make this in the Instant Pot or in a rice cooker. The coconut milk with the cilantro and lime makes this a world of flavor in just a few minutes!

INGREDIENTS

Rinse rice, chop cilantro, & juice a lime.

Add rice, coconut milk, salt, & water to the Instant Pot.

Cook using 'rice' function for 12 minutes, natural release for 10. 

Mix cilantro and lime juice with cooked rice

Mix well & serve hot or chilled!

Everyone will love this side dish!
