This Coconut Milk Poached Cod is so delicate, flaky, and surprisingly flavorful! Slightly sweet, lemony, and full of fresh dill, this cod recipe is the best way to get delicate flaky fish! Plus, it is so easy and perfect for quick weeknight meals!

INGREDIENTS

Saute ginger and garlic until fragrant and slightly browned.

Place lemon slices, cod filets, coconut milk and seasonings in the pan. Simmer for 8-10 minutes.

Serve over orzo and drizzle with coconut milk poaching liquid, dill and chili oil.
