HEALTHY FISH TACOS

with cod! 

PERFECT FOR TACO TUESDAY! 

These healthy fish tacos are PACKED full of flavor. Oven-baked, marinated, flaky cod pairs perfectly with the Greek yogurt pineapple slaw for a high-protein, healthy meal!

INGREDIENTS

Place peppers in a bowl and cover with boiling water. Let sit for 10 minutes.

Add rehydrated peppers and remaining marinade ingredients to a blender. Blend until smooth. 

Cut cod into 1-inch pieces and cover with the marinade. 

Combine all slaw ingredients until well incorporated. Season to taste with salt.

Broil fish for 8-10 minutes. 

Assemble tacos and enjoy!
