Eggless Gnocchi Pasta

This vegan gnocchi will be your new go-to pasta! Whip it up in less than 1 hour and use it in a Vegan Gnocchi Soup!


Cook the potatoes, remove the skin, and pass through a ricer or mash well.

Add potatoes, flour, and olive oil to a mixing bowl. 

Mix with a fork until you have a crumbly semblance of a dough. 

Use your hands to continue mixing and kneading until a smooth ball is formed. 

Take a small piece of dough & gently roll on the counter until you have an even, oval-shaped gnocchi.

Boil the gnocchi until it floats and add sauce or add it to a gnocchi soup & enjoy!
