It is so quick and easy when cooked in the Instant Pot, and it is so creamy and flavorful. It only has 7 total ingredients and it will be done in 20 minutes or less!

INGREDIENTS

Saute shallots then add arborio rice stirring for 30 seconds so lightly toasted.

Add corn kernels and corn stock then pressure cook for 5 minutes. Then release for 10 minutes.

Stir in milk, vegan butter, and vegan parmesan cheese. Season with salt & pepper.
