LEMON RISOTTO

IMPRESSIVE MEAL!

This Risotto al Limone is so creamy, perfectly tangy, and just delicious! Made with simple ingredients in the authentic Italian method, this is the perfect meal!

INGREDIENTS

Sweat onions until translucent then add garlic until fragrant. Add in arborio rice and toast for 1-2 minutes. 

Deglaze the pan by adding sherry. Stir until nearly absorbed & evaporated.

Add 1/4 cup vegetable broth at a time, only adding more once fully absorbed. Repeat until all broth is used.

Add lemon juice/zest, butter, and grated parmesan and stir to combine.

Stir until the butter and cheese are emulsified into the risotto. Add salt and pepper. 

Serve hot and garnish with fresh chives, flaky salt, and any remaining lemon zest.
