This Vegan Pot Pie Soup is the epitome of comfort food! Get all of the pot pie flavors without all of the hassle of a pie crust. Pair this with some Homemade Stecca Bread for a satisfying meal!

INGREDIENTS

Add diced onion, celery, and carrot and sauté in melted butter until onion is slightly translucent.

Add in the garlic, cook until fragrant. Sprinkle flour over the veggies, mix to combine and cook for a minute. 

Add the almond milk and mix into the flour and vegetables until it becomes a thick, creamy sauce.

Add vegetable broth and potatoes and bring to a simmer.

Once potatoes are cooked, add in frozen peas and heavy cream. Stir to combine.
