Warm up with this easy and flavorful Vegan Potato Leek Soup! Quickly make this on the stovetop or make it even faster in the Instant Pot!

INGREDIENTS

Slice the leeks then place in a bowl of water to wash. Drain.

Add butter, leeks, and garlic to pot. Sweat them until soft.

Remove half the the leeks and add onion and herbs and saute until onion is transluscent.

Add potatoes and vegetable broth and cook until potatoes are soft.

Blend everything together with an immersion blender until smooth.

Add back in the leeks that you removed before adding the onions & coconut cream and stir. 

Season with salt & pepper and garnish with fresh herbs.
