RAVIOLO AL UOVO

Raviolo al Uovo is, hands-down, one of the most decadent and indulgent of all the Italian pasta dishes. This egg yolk filled ravioli coated in a brown butter sauce is sure to impress!

INGREDIENTS

Whisk together ricotta, parmesan, salt, and parsley until combined.

Roll out pasta sheet and brush with egg white and press down bowl gently to make a ravioli ring.

Pipe cheese mixture in a circle of the pasta. Carefully add yolk to center of the cheese.

Gently place a second pasta sheet over top of the yolk and cheese.

Press bowl over top to create a seal. Use a knife or a ridged pasta cutter to cut around the edge of the bowl.

Cook the pasta in salted boiling water for 2 minutes. Remove and cover in browned butter.
