This Vegan Tortilla Soup uses chickpeas to create a super flavorful and warming dish that's filling enough for a meal! Use the Instant Pot to get this on your table in under 30 minutes!

INGREDIENTS

Add diced onion, carrot, and jalapeño and sauté until soft and onions are translucent

Add chickpeas, black beans, corn kernels and rotel. Stir to combine.

Add vegetable broth, chili powder, garlic powder, and salsa verde.

Pressure cook on HIGH pressure for 1 minute then cancel and let pressure naturally release. 

Garnish with sour cream, cilantro, a squeeze of lime, avocado slices, and more!
