Olive Garden Copycat

This vegan gnocchi soup is a total copycat of Olive Garden's famous soup! Without the meat or the dairy, this soup is just as hearty, delicious, and not to mention easy!

INGREDIENTS

Sauté onion, garlic, celery, carrot, & thyme in olive oil. 

Add vegetable broth & kale. Pressure cook for 2 minutes with 5 min natural release.

Stir soup and add a can of unsweet coconut milk. Combine thoroughly.

Add uncooked gnocchi and simmer until the gnocchi floats. 

Season, serve hot, garnish, & enjoy!
