This Vegan Yaki Udon dish is packed full of flavor! Tender & chewy udon noodles are stir fried with fresh vegetables & a sweet sauce for a perfect weeknight meal.

INGREDIENTS

Mix sauce ingredients into a glass measuring cup

Sauté onions, then add all other vegetables until soft.

Remove half of the vegetables and set aside. Drizzle with soy sauce.

Add the udon noodles and the sauce.

Toss to combine, then garnish and serve hot.
