Begin by draining the jarred pimento peppers to get rid of the excess liquid. If you need to dice your peppers more finely, do so now.
(Optional) Depending on the type of cheddar shreds you chose, you may want to roughly chop them so they they mix a little better.
Add all ingredients to a mixing bowl and use a fork to mix thoroughly. The fork will help break the pieces up and mix more seamlessly.
Season with garlic powder and salt and mix again.
Scoop out into a serving bowl with crackers or use for a sandwich filling.
Garnish with parsley or chives and enjoy!

- I highly recommend using VioLife cheddar shreds for the best taste and texture. However, I believe Daiya also makes a good vegan cheese.
- Serve this dip with crackers, chips, or toasted bread. Or, use it as the filling for a sandwich or even the cheese source for mac and cheese!
