Curry Roasted Chickpeas

These Curry Roasted Chickpeas are the perfect thing to snack on! They are super crunchy, flavorful, and packed with plant-based protein. Just mix together some common spices, roast, and enjoy your healthy snack!

Ingredients

  • 2 15 ounce Cans of Chickpeas drained, rinsed, and patted dry
  • ¼ cup Olive oil
  • 1 tablespoon Curry powder
  • ½ teaspoon Frech thyme
  • ¼ teaspoon Smoked paprika
  • teaspoon Cinnamon
  • Salt

Instructions

  • Start by draining and rinsing your cans of chickpeas.
  • Pat the chickpeas as dry as you can with a paper towel to remove all excess water. 
  • In a small bowl, combine curry powder, smoked paprika, cinnamon, and French thyme. 
  • Preheat your oven to 400ºF. 
  • Add the drained chickpeas to a sheet pan and toss them with extra virgin olive oil. 
  • Sprinkle the spice mix over the chickpeas and mix to ensure each chickpea is coated. 
  • Roast in the oven for 28-30 minutes, until crispy. 
  • Once the chickpeas are crispy, remove them from the oven and immediately sprinkle them with salt while they are still hot. 
  • Allow the chickpeas to cool, then enjoy!

  • Use these crispy chickpeas as an alternative to croutons on a salad! They are just as crispy, more flavorful, and have more fiber and protein than croutons!
  • Add some cayenne powder to the mix if you want a spicy kick to your crispy chickpeas.
  • Make sure the chickpeas are completely dry before adding them to the sheet pan. If they have water on them, it will make it more difficult for them to get crispy.
