Start by draining and rinsing your cans of chickpeas.
Pat the chickpeas as dry as you can with a paper towel to remove all excess water.
In a small bowl, combine curry powder, smoked paprika, cinnamon, and French thyme.
Preheat your oven to 400ºF.
Add the drained chickpeas to a sheet pan and toss them with extra virgin olive oil.
Sprinkle the spice mix over the chickpeas and mix to ensure each chickpea is coated.
Roast in the oven for 28-30 minutes, until crispy.
Once the chickpeas are crispy, remove them from the oven and immediately sprinkle them with salt while they are still hot.
Allow the chickpeas to cool, then enjoy!
