Ingredients

  • 1 Block Soft or Silken Tofu (19 ounce block)
  • ¼ cup Lemon Juice (1 lemon squeezed)
  • 20 grams Shallot (½ small shallot)
  • 5 grams Fresh Dill (about 3 large sprigs)
  • 6 grams Fresh Chives (about 20 sprigs of chives)
  • 7 grams Fresh Parsley (about 5 sprigs)
  • ½ tablespoon Salt
  • ½ tablespoon Garlic Powder

Instructions

  • Begin by removing tofu from its package and draining excess liquid. Lightly pat dry but do not press.
  • Roughly chop the shallot, the tofu block, and squeeze the lemon.
  • Add the tofu to the food processor and blend it as much as you can before adding other ingredients.
  • Add the lemon juice and blend again. It should get smoother.
  • Add the chopped shallot, all of the fresh herbs, and the salt and garlic powder.
  • Blend for at least 30 seconds until completely smooth and well incorporated.
  • Taste and adjust levels of salt, lemon, or herbs.

  • Be sure to use very soft or silken tofu! Firmer tofus won't result in the same silky texture. If you can't find soft tofu and have to use firm, be sure to add more liquid in the form of extra lemon juice, a bit of water, or a small amount of non-dairy milk.
  • Increase the flavor level by adding extra herbs! Blend up some scallions, tarragon, cilantro, or even lemongrass to create some more rich flavors.
  • For best results, use a good quality food processor. A blender will work in a pinch, but may need some extra blending and stirring to get as smooth.
