Begin by removing tofu from its package and draining excess liquid. Lightly pat dry but do not press.
Roughly chop the shallot, the tofu block, and squeeze the lemon.
Add the tofu to the food processor and blend it as much as you can before adding other ingredients.
Add the lemon juice and blend again. It should get smoother.
Add the chopped shallot, all of the fresh herbs, and the salt and garlic powder.
Blend for at least 30 seconds until completely smooth and well incorporated.
Taste and adjust levels of salt, lemon, or herbs.
