  • Begin by draining the jarred pimento peppers to get rid of the excess liquid. If you need to dice your peppers more finely, do so now. 
  • (Optional) Depending on the type of cheddar shreds you chose, you may want to roughly chop them so they they mix a little better. 
  • Add all ingredients to a mixing bowl and use a fork to mix thoroughly. The fork will help break the pieces up and mix more seamlessly. 
  • Season with garlic powder and salt and mix again.
  • Scoop out into a serving bowl with crackers or use for a sandwich filling.
  • Garnish with parsley or chives and enjoy!

Notes

  • Use your creativity and customize this! Add raw or roasted jalapeños, vegan bacon, confit garlic, or other cheeses to make different variations of vegan pimento cheese.
  • I highly recommend using VioLife cheddar shreds for the best taste and texture. However, I believe Daiya also makes a good vegan cheese.
  • Serve this dip with crackers, chips, or toasted bread. Or, use it as the filling for a sandwich or even the cheese source for mac and cheese!
