This Savory Oatmeal recipe is my go-to breakfast almost every single day! People usually think of oatmeal as sweet, but I love to switch it up with a fried egg, miso paste, parmesan cheese, soy sauce, or whatever else sounds good to you!
I've always been a fan of savory breakfasts over sweet ones. So, for most of my life, I never ate oatmeal for breakfast because it was it was sweet! oatmeal. Then, I realized it didn't have to be sweet. I like to treat the oatmeal like a pasta dish, adding the same things you would add to pasta to the savory oats recipe. You can really use anything you want, and I change it up a lot. Sometimes I use cherry tomatoes, chicken broth, sesame oil, cheddar cheese, chili oil, white miso paste, the list goes on and on!
If you've ever had asian-style congee (or savory rice porridge), you'll probably enjoy savory oatmeal! A lot of times, the flavor and textures are very similar, but with the added health benefits of oatmeal.

- Quick-cooking Steel-cut Oats
- White miso paste

📋 How to make Savory Oatmeal
Step 1: Cook the Oats
In a small pot, bring about 1 ¼ cups water to a simmer, then add the quick cooking oats. Stir.
Add a pinch of salt (about ½ teaspoon) then add the chopped kale. Stir until kale is wilted and fully combined.
Add the miso paste and stir or whisk until it is fully dissolved into the oatmeal. Stir in the grated parmesan cheese and add black pepper to your liking.
Step 2: Cook the Egg
In a separate pan, add about 1 tablespoon of butter or oil over medium-high heat. Crack 1 egg into the pan and cook until the whites are set and the yolk is still runny. Or, continue cooking for longer if you prefer a more done egg. You may also wish to flip the egg midway through cooking to get a more even cook, or you can add a small amount of water (1 tsp) to the pan and cover with a lid to help the cooking process.
Step 3: Finishing Touches
Serve the hot savory oats in a bowl, and add the fried egg on top. Garnish with more cheese and thinly sliced chives or green onions.
Hint: Use whatever cooking method of eggs you like! Feel free to scramble, poach, or even use a soft-boiled egg or a hard-boiled egg.
Variations
- Spicy - add chili pepper flakes while cooking to imbue heat into the dish, or top with sriracha or chili oil or hot sauce.
- High Protein/Healthy - Cook the oats in chicken stock, add cottage cheese or greek yogurt, and bacon bits for more protein. Add sliced avocado for added healthy fats.
- Vegan - Make a vegan version of this by using vegetable broth, steel cut oats, vegan butter, and savory toppings like sweet potatoes, vegan cheese, sesame seeds, fresh vegetables, fresh herbs, and more!

Storage
I recommend eating this savory breakfast immediately. However, you can store the cooked oatmeal in the fridge in an airtight container. Good for 2-3 days.
Reheat in a pot or pan with a bit of water or microwave. Do not store the egg, add only when ready to eat.

- Don't undercook the oats. I always prefer to err on the side of overcooking the oats rather than undercook. This helps create a creamy and satisfying texture.
- Be sure not to use pre-packaged oatmeal packets. These are usually pre-flavored with things like brown sugar or maple syrup, which would not combine well with the savory flavors.

You can add all kinds of spices to savory oatmeal. Aside from salt and pepper, feel free to add garlic powder, onion powder, smoked paprika, aleppo pepper, cayenne pepper, red pepper flakes, turmeric, ginger, and whatever else sounds good to you! Adding spices is a great way to ensure a burst of flavor.
When you want to add a jammy egg to your savory oats, you can also just crack the egg right into the cooking oats! This can be a bit trickier than cooking separately, but it works great. Alternatively, you can scramble eggs or egg whites right into the oatmeal as well for a thicker texture and added protein.
There are tons of ways to transform a bowl of oatmeal into a delicious breakfast. One of my favorite methods of making savory oatmeal bowls is to saute cherry or sun-dried tomatoes before adding the water and oats. Then, I like to make it creamy by adding yogurt, feta cheese, a dash of cream, or sour cream. I like to then add some of my favorite toppings at the end like chopped green onion, a bit of lemon juice, sautéed spinach, and soft boiled eggs!
