Despite being somewhat controversial because of their strong smell and bitter bite. brussel sprouts are truly one of my favorite vegetables. I don't know when or why (though I have some theories as to why), but sometime in the last 5-10 years brussel sprouts had a major glow-up. They were the most-hated veggie for SO long, now we can't get enough of them! Add in a hot honey glaze, and brussel sprouts may just become your new favorite vegetable side dish!
These hot honey brussels sprouts are just the epitome of flavor. Crispy on the bottom with a sweet and spicy glaze. Toss them with some goat cheese and pomegranate and fresh herbs, and you've got an amazing veggie side dish!

Ingredients and Substitutions
- Brussel Sprouts - Whole, fresh brussels sprouts. No substitutions here! Don't use frozen, they won't roast as well.
- Hot Honey - Either buy hot honey, such as Mike's Hot Honey or any other brand that you like, make your own hot honey sauce using my Hot Honey Recipe, or just use regular honey and red pepper flakes together in this recipe!
- Olive Oil - Or another oil like avocado oil could work too.
- Garlic Powder - I suppose if you wanted to use minced garlic, that could be good too, but it would change the flavor a bit!
- Optional Add-Ins - I added in pomegranate arils and crumbled goat cheese and fresh mint, and it was delicious! Crispy bacon would be a nice crunchy, and savory addition as well. Use any of these or something else that you think would be good! Get creative.

📋 How to make Hot Honey Brussel Sprouts
Step 1: Prepare Ingredients
Preheat the oven to 425º Fahrenheit.
Begin by slicing each brussel sprout in half, longways, so that the root stays intact. If necessary, trim off a small part of the root if it is too long or looks brown.
Set aside.
Step 2: Make the Marinade
In a small mixing bowl, combine the hot honey (or honey with red pepper flakes), olive oil, and garlic powder in a bowl. Use a whisk to stir together until emulsified (should not be separated).
In a larger bowl, add the sliced brussel sprouts and the hot honey mixture. Use your hands to combine thoroughly, until all of the brussel sprouts are coated.
Step 3: Bake & Garnish
Add the brussel sprouts to a sheet pan in a single layer and place each one face down for the perfect texture. Laying the brussel sprouts in one even layer is crucial to creating crispy brussels.
Roast in the hot oven for 25-35 minutes or until crispy and cooked through.
Once done, remove the roasted brussels sprouts from oven and immediately sprinkle with salt.
Serve warm and garnish with things like pomegranate seeds, goat or feta cheese, fresh herbs like mint, and/or more! Sprinkle with flaky salt if you have it. If you're feeling extra spicy, add an extra drizzle of hot honey or sprinkle a teaspoon of red pepper flakes for a nice kick of heat!

I made these for Thanksgiving. I started with a test run because I was convinced they would burn before actually cooking with the honey added at the outset. I was correct and so thankful that I did a small batch to test my theory. So, on my next run I roasted them first for 25-30 minutes. While they were roasting I heated up the honey mixture on the stovetop with a little water for viscosity. I flipped the sprouts halfway through cooking and added the sauce at the end. I was going to air fry them afterwards but they held up surprisingly well on the hour drive to my cousins and dinner 2 hours after that. I also added in broth-soaked craisins and served the goat cheese on the side since everyone isn't a fan. These weren't as "hot" as I expected so I added some red pepper flakes as well.
Not bad but I was expecting a more powerful flavor hit. Thank you for the start though - I know what I will do differently next time to get what I want. FWIW my family loved them lol
