I'm the kind of person who always needs to have a salty snack on hand! These crispy chickpeas are the perfect alternative to potato chips or popcorn. Crispy curry roasted chickpeas are also great to use as a topping for a salad or even in a pasta dish!

Since this recipe is so easy and straight forward, it is very easily customizable. Add more spice or omit any that you don't like! Throw in some cayenne powder if you like spicy!

    Why You'll Love This Recipe

    • So Simple - All you have to do is mix the spices and roast the chickpeas!
    • Seven Ingredients! Just some simple spices, olive oil, and chickpeas!
    • Perfect Snack - This is the perfect solution for when you're craving a high protein, crispy, salty snack.

What You Need For This Recipe

    Ingredients and Substitutions:

    photo of ingredients with labels
    • Canned Chickpeas - Canned chickpeas or garbanzo beans will work as they are the same thing. I don't recommend buying them dry, as that requires a soaking process.
    • Curry Powder - Curry is the main flavor in this dish!
    • Cinnamon - This adds just a touch of sweetness for balance
    • Smoked Paprika - This adds a great subtle smokey flavor
    • French Thyme - Thyme leaves add a balanced herbal flavor
    • Olive Oil - Good quality olive oil helps get the chickpeas extra crispy.
    • Salt

    Tools:

    • Sheet Pan

    How to Make This Recipe

    Step 1: Prepare the Ingredients

Start by draining and rinsing your cans of chickpeas. Pat the chickpeas as dry as you can with a paper towel to remove all excess water.

In a small bowl, combine curry powder, smoked paprika, cinnamon, and French thyme.

    Step 2: Roast the Chickpeas

    Preheat your oven to 400ºF.

Add the drained chickpeas to a sheet pan and toss them with extra virgin olive oil.

Sprinkle the spice mix over the chickpeas and mix to ensure each chickpea is coated.

Roast in the oven for 28-30 minutes, until crispy.

    Step 3: Finishing Touches

Once the chickpeas are crispy, remove them from the oven and immediately sprinkle them with salt while they are still hot.

Allow the chickpeas to cool, then enjoy!

    Expert Tips

    • Use these crispy chickpeas as an alternative to croutons on a salad! They are just as crispy, more flavorful, and have more fiber and protein than croutons!
    • Add some cayenne powder to the mix if you want a spicy kick to your crispy chickpeas.
    • Make sure the chickpeas are completely dry before adding them to the sheet pan. If they have water on them, it will make it more difficult for them to get crispy.

    Recipe FAQs

Are roasted chickpeas good for you?

Yes! Roasted chickpeas are nutrient-dense, high in fiber and protein, and have healthy carbs!

Why are my roasted chickpeas soft?

This is often the result of not drying the chickpeas enough, using too little olive oil, or not baking long enough.

Are chickpeas and garbanzo beans the same thing?

Yes, cans labeled chickpeas or garbanzo beans are the same product.
