I love using millet as a savory alternative to quinoa or even oats! Cooking it in the Instant Pot results in a perfectly fluffy and flavorful grain every time, with very little effort.

Millet are seeds that were originally cultivated in Asia and became a very popular food in Europe in the Middle Ages.
It is often used for pasture and to produce hay in the West, but it is still a very common food in lesser developed countries.
The grain has gained western popularity due to its moderately high protein and fiber content, and the fact that it is a gluten-free grain. Millet is often served in a porridge-style like oatmeal, or sometimes eaten in place of rice or quinoa.

Ingredients and Substitutions
- Hulled Millet - Most millet that is found in stores is hulled millet, but double check to be sure!
- Broth - If you're making millet to use in savory applications, then I highly recommend using broth to cook in. If not, water is fine.
- Salt - This is also optional. Omit if not planning to enjoy millet savory.
- Butter & more - After cooking, I recommend adding some butter, as well as any other flavoring agents you desire.

📋 How to make Instant Pot Millet
Step 1: Prepare Ingredients
Measure out the necessary amount of millet and broth, as well as salt and (if using) butter.
Some choose to rinse their millet before cooking. This is not necessary, but you may do so if you wish.
Add the millet and broth to the instant pot or pressure cooker.
Add salt and gently stir.
Step 2: Pressure Cook
Close the lid on the Instant Pot and set the valve to "sealing."
Pressure cook on HIGH for 10 minutes.
(NOTE: It will take 8-10 minutes for the pot to come to pressure before the 10 minute countdown begins.)
When the pot beeps to indicate the 10 minutes are over, press CANCEL.
Set your own timer and wait for 8 more minutes.
After those 8 minutes, use a wooden spoon to flip the valve to "venting" and release any remaining pressure.
Remove the lid and stir to fluff the millet.
Step 3: Finishing Touches
Once the millet is stirred and fluffed, add the butter if you choose.
Store for later or serve warm, seasoning to taste with whatever you enjoy!
