Since I was born and raised in the south, it is no stretch to claim that pimento cheese dip is a southern delicacy. It's incredibly simple, cheap, and easy to make. However, it has never been considered a healthy, and certainly not a vegan dish.
Until now! In a traditional pimento cheese, the chopped pimentos would be just about the only plant-based ingredient in the dish. However, vegan food has evolved to a point such that there is a good-tasting alternative for every ingredient!
Pro Tip: Throw this dip into Vegan Mac and Cheese just before its done for a tangy, melty, cheesy mac!

Ingredients and Substitutions:
- Vegan Cheddar Shreds - Any brand of vegan cheddar cheese shreds will work, but make sure you find a brand that you enjoy! The cheese flavor comes through in this dish, so don't use cheese you don't like on its own. I highly recommend VioLife.
- Vegan Mayonnaise - Again, any brand will work here and most of them taste the same!
- Vegan Cream Cheese - There are many vegan cream cheeses out there, I used plain for this recipe, but feel free to try a scallion or chive flavor! If you can't find vegan cream cheese, I would suggest using my cashew cream recipe!
- Diced Pimentos - I bought mine jarred. You can also buy sliced pimentos and dice them yourself.
How to make this recipe
Step 1: Prepare Ingredients
Begin by draining the jarred pimento peppers to get rid of the excess liquid. If you need to dice your peppers more finely, do so now.
(Optional) Depending on the type of cheddar shreds you chose, you may want to roughly chop them so they they mix a little better.
Step 2: Mix
Add all ingredients to a mixing bowl and use a fork to mix thoroughly. The fork will help break the pieces up and mix more seamlessly.
Season with garlic powder and salt and mix again.
Step 3: Finishing Touches
Scoop out into a serving bowl with crackers or use for a sandwich filling.
Garnish with parsley or chives and enjoy!

Recipe FAQs
This dip will last in for at least one week when stored in an air-tight container in the refrigerator. I do not recommend freezing this dip as it will change the texture of some of the products.
The great thing about this dip is that it is versatile! You can enjoy this as a cool dip on crackers and sandwiches or as a melty hot cheese dip for chips or sauces!
Traditional pimento cheese dip is not vegan-friendly as it consists of cheese and mayonnaise, which has eggs. However, this recipe does not use any animal products and it 100% vegan-friendly!
